Basic Pancake Recipe – 4 WAYS for the Whole Family!

Everyone loves delicious, home-made pancakes… The question is which of these four yummy serving ideas will you eat them? Maybe try them all… we won’t tell if you don’t!

Shrove Tuesday is next week and whether you follow this Christian tradition or not, let’s be honest, everyone loves a delicious pancake! Initially Shrove was the moveable feast before Lent when people aimed to use all their eggs, dairy, sugar and butter before fasting however today more commonly known as “Pancake Tuesday” we think it’s a great excuse to indulge in some family food fun. The greatest decision you’ll face this year is with four absolutely delicious serving suggestions from Leanne of the Lime and Mortar blog is just how you’ll eat them.

This easy pancake recipe will have you sitting down to fresh, fluffy pancakes in no time.  Bon appetite.

Makes 12

Ingredients

  • 1 cup Self-Raising Flour
  • 1 cup Milk
  • 1 Egg
  • 3 TBS Sugar
  • 1 tsp Vanilla Essence

1) Place all ingredients into a bowl or jug that mixture can be poured from.
2) Whisk all ingredients until combined and smooth
3) Heat non stick frying pan over medium heat. Add butter or spray oil and pour mixture in the pan
4) Once bubbles appear on the pancakes flip them over. Turn heat down to low-medium
5) Once golden on both sides transfer to a plate
6) Repeat step 3-5 until all the mixture has been used.
7) Add toppings and enjoy!

Four Fab Topping Ideas:

Choc chip with raspberries & cream:

Step 4 of the above pancake recipe, as bubbles appear sprinkle choc chips on the pancakes before flipping.

Once cooked create a stack and top with whipped cream and raspberries (fresh or frozen)

Bacon & maple syrup:

Cook bacon until golden. Place on top of pancakes and drizzle with maple syrup

Lime & brown sugar:

This is my take on the traditional lemon and sugar. Squeeze limes over the pancakes and sprinkle with brown sugar

Ice cream & fruit:

A favourite for the kids!  Follow the basic pancake recipe and then place some vanilla ice cream on top and add sliced banana & strawberries.
