Banana Choc Coconut Muffins

Banana Choc Chip MuffinsDelicious Banana Choc Chip Muffins that will fill those little tummies for longer. Make a batch and freeze them for an easy snack your kids will love.

Ingredients for banana choc chip muffins:

  • 125g unsalted butter, melted
  • ¾ cup caster sugar
  • 3 ripe bananas, roughly chopped
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups self-raising flour, sifted
  • 1 cup desiccated coconut
  • ½ cup milk chocolate chips
  • Icing sugar, to dust

Method

Step 1. Preheat oven to 200°C and grease a muffin pan.

Step 2. Process butter, caster sugar, banana, eggs and vanilla in a food processor until well combined.

Step 3.  Place flour, coconut and chocolate in a large bowl, then fold in banana mixture. Working in batches, place dessertspoons of mixture into muffin pan.

Step 4.  Bake for around 15 – 20 minutes or until golden.

Step 5.  Cool slightly in pan, then turn out onto a rack to cool completely. Serve dusted with icing sugar.
