I have been looking for something different for lunch, after toasted sandwiches and wraps started to get a bit boring. I love recipes that just use one bowl and are quick to make, while the hungry hoards wait. These carrot and coriander fritters fit both criteria, made in about five minutes and were scoffed down very quickly.
2 Carrots Grated
½ Cup frozen peas and corn
¼ Cup chopped coriander
1 egg, beaten gently
¼ Cup flour
1 teaspoon of ground cumin
1 teaspoon of ground coriander
1 tablespoon of oil for frying
1. Combine all ingredients. Roll into balls, 2 tablespoons worth at a time.
2. Heat frypan and add fritter balls. Press down slightly. Fry until golden on each side.
Serve warm with some yoghurt for dipping and some coriander.
