Recipe by Kristin Cosgrove
We don’t often have dessert at our house but it doesn’t stop my children asking for it almost every night! There are many healthy dessert options for kids and usually some berries and yoghurt or a bliss ball will do the trick.
For a more fun and even more delicious after dinner treat, these smoothie poles work well. We often have some in the freezer for after school on hot days or for when friends drop by for lunch.
The strawberries are inter changeable with blueberries, raspberries, mango or banana. My kids love these smoothie poles and I’m sure yours will too.
Strawberry Smoothie Icy Poles
Makes 6-8 depending on the size of your icy-pole moulds.
1 cup of coconut milk (additive free)
1 cup of coconut water
1 cup of washed, hulled and halved strawberries
1 tablespoon of honey or maple syrup
Place all ingredients in a blender and whiz until well combined and creamy.
Pour Smoothie into icy-pole moulds and place in the freezer until ready to eat.
A delicious, healthy dessert couldn’t be easier!
