A scrumptious vanilla Valentines Day cupcake combined with some DIY Valentines Fun of a FREE printable
Everyone loves a delicious, light cupcake and these are perfect for a little Valentines Day treat! Not only is there a delicious recipe for you to make but we’ve a cute-as-a-button printable as well – perfect for surprising the kids with some afternoon tea or ideal for if they wanted to take cupcakes to school for gifts for their little loved ones. Today’s gorgeous post is by Rebecca Low.
Ingredients
125g butter
3/4C (180g) caster sugar
1t vanilla
2 eggs
11/2C (225g) plain flour
11/2t baking powder
1/2C milk
Frosting
100g butter, softened
2C icing sugar
Splash milk
Good pinch salt
1t vanilla
Helpful tip: Cakes turn out best when all ingredients are at room temperature!
Method
Step 1: Preheat oven to 180˚C.
Step 2: Cream butter and sugar until light and fluffy.
Step 3: Add vanilla.
Step 4: Add eggs one at a time, beating well.
Step 5: Sift flour and baking powder and fold into mixture with milk until combined.
Step 6: Pour into patty cases and fill to two thirds.
Step 7: Bake for 16 minutes or until cakes spring back when lightly touched.
Step 8: For the frosting, place all the ingredients into a mixer and beat for 6 minutes until light and fluffy. Pipe onto cupcakes.
Step 9: Cut out cake toppers (each design has a front and back but you can choose just the front if you prefer) and attach to toothpicks with double sided tape or a dot of glue.
Step 10: Insert into cupcakes and add some Valentines flair!
