Easy and Quick Apple Crumble Balls

Call off the search! We’ve found a great afternoon tea snack or lunchbox filler for you, exclusive to Baby Hints and Tips from Peta Rhind of The Road to Loving My Thermomix. Don’t stop reading if you don’t have a thermie, there’s also a food processor method as well.

Easy to make, filled with goodness and tasty to boot the only problem you’ll face with this recipe is that they’ll be disappearing as quick as you can make them…

Makes 20

Can be frozen
Total cooking time: 15 minutes + resting time

Ingredients

200g dried apple rings
6 pitted dates
100g toasted fruitless muesli **Use nut free for school or if one of your family have allergies **
1/2 teaspoon of ground cinnamon
½ teaspoon vanilla bean paste
Desiccated coconut to roll in

Traditional method:

Place everything in to a food processor.
Blitz on high for approximately 1 minute or until crumbly and when pressed together holds its shape.
Roll into 20 balls and roll in desiccated coconut to coat.
Keep in the fridge for 5-7 days or freeze. Best served fresh though.

Thermomix method:

Place everything in to your Thermomix.
Blitz on speed 10 for 1 minute.
If you do not have a Thermomix, simply process in a food processor on high for 1 minute or until crumbly and when pressed together holds its shape.
Roll into 20 balls and roll in desiccated coconut to coat.
Keep in the fridge for 5-7 days or freeze. Best served fresh though.
