{RECIPE} Kate’s Eggless Banana Bread

Now that I have two girls at school, allergies are things you have to watch out for. This vegan banana bread is great for breakfast with a bowl of fruit on the side or even cut up and put into lunch boxes.

Enjoy this moist yummy snack!

Ingredients:
3 over ripe bananas mashed
1 ½ cup of Wholemeal S/R flour
½ cup of Wholemeal plain flour
1 teaspoon of baking soda
¾ cup of brown sugar
¼ cup of olive oil (or any other type of vegetable oil)
1 cup of Hot water
Teaspoon of cinnamon
Teaspoon of vanilla
Large handful of sultanas (optional)

Method:

Pre- heat your oven to 180C.

Place all dry ingredients into a bowl and give it a quick stir. Add the oil and bananas & start to combine then gradually add the hot water until it’s all combined.

Cover a loaf pan in grease proof paper, or grease and flour the pan. Pour in the mixture and smooth the top.

Cook for 20mins. Check with a skewer, if it comes out clean your banana bread is ready.
