No Bake Fruit and Seed Slice

No bake fruit and seed sliceI make this simple yet tasty no bake fruit and seed slice for my kids to add to their school snacks.  `It provides plenty of energy to keep kids going, good fats for healthy brain development, vitamins, minerals and it’s naturally sweetened…but best of all…my kids love it!

Fruit and seed slice ingredients:

  • 2 cups rolled oats
  • 1/2 cup chopped organic dried apricots
  • 1 cup pitted and chopped Medjool dates
  • 3/4 cup mixed seeds (try sunflower, pepita, sesame, linseed and chia)
  • Juice of two oranges
  • Goji berries for sprinkling (optional)

Method:

Step 1. Place the oats, seeds and dried fruit in the Thermomix or food processor and pulse until combined and roughly chopped.

Step 2. Add the orange juice and process again until the mixture begins to stick together.

Step 3. Tip the mixture into a lined slice tin (mine is 20cm x 20cm) and press down with the back of a wet spoon to flatten evenly.

Step 4. Refrigerate for at least an hour before cutting into desired slices.

Step 5. Store in the fridge in a container with a piece of baking paper in between each piece to prevent sticking.
