If your looking for something a little different that muesli bars this is quick and easy to do. You can put into a little snack bag and put in with your little ones lunch box.
Ingredients
5 cups of popped popcorn
1 cup of chopped apricots
1/2 cup shredded coconut
1/3 cup of coconut oil
1/4 honey
1/2 cup of rice-malt syrup
Teaspoon of cinnamon
Method
Place popcorn Into a bowl along with the other dry ingredients. Put honey, syrup, cinnamon into a sauce pan a heat until bubbly the pour over the top of the ingredients in the bowl. Spread out in a slice tray and refrigerate for an hour. Once cooled slice up and pop into a air tight container in the fridge!
