Recipe by Frost Bite: Easy Cooking for Your Freezer
A fun take on a classic family dinner
Ingredients:
1 1/2 sheets puff pastry
6 eggs
2 potatoes
1 onion
3 rashers of bacon
1/2 capsicum
4 button mushrooms
1 cup grated cheese
dried mixed herbs
dob of butter or margarine to grease baking dish
Method:
Slice potatoes and par boil (I do it in the microwave), drain and cool. Slice onion and bacon into small pieces and fry.
Slice other vegetables. Cut star shapes out of the half sheet of pastry (children can help with this). Grease baking dish with butter or margarine (children can help with this). Push pastry into baking dish and push into sides. Arrange potato on bottom of dish, then sprinkle over onion and bacon. Arrange other vegetables on top (children can help with this). Sprinkle over cheese, then herbs. Lastly place stars on top. Put in a moderate oven (180oC) until golden brown.
Eat warm or cold.
Also great to make in muffin tins for a picnic. Enjoy!
