{RECIPE} Spaghetti and Veggie Balls

What’s wrong with having one meal a week that’s vegetarian? Meals like this go a long way, very cheap and good for you. It’s a great way to get those kiddies eating those vegetables without complaining.

Mine do a lot of complaining!

My girls love their spaghetti and meatballs, this option is a great twist and tastes great!

Ingredients

Veggie balls
1 tin of chick peas
1 tin of 4 bean mix
1 tablespoon of Tomato paste
1/4 cup of chopped parsley
1 large tablespoon of basil
2 cloves of garlic
3/4 cup of plain flour

Sauce
1 onion
3 cloves of garlic
Teaspoon of dried oregano
2 tablespoons of chopped parsley
2 tablespoons of chopped basil
800g tin of diced tomatoes
Large splash of white wine
Pinch of sugar

Method

To make the Veggie Balls:

1. Drain the beans and chick peas then blend together until smooth. Add 1/2 cup of flour, basil garlic & parsley and stir through.

2. Once mixed through roll into little balls then roll in remaining flour until all rolled. When these are finished place the Balls into a fry pan and pan fry until all golden. Remove from heat and put to the side.

To make the Sauce:

3. Sweat off onion, oregano & garlic, once soft add splash of wine cook until slightly reduced. Add tinned tomatoes parsley, basil and sugar. Mix through and simmer for 10 mins

4. Once sauce is ready add the balls

Serve on top of Wholemeal pasta ( or white) with some parmesan cheese
