These delicious cheese and vegemite scrolls are perfect to make up as a batch and freeze for a quick and easy morning tea, lunch or to send to for school lunch. Your kids will love to help to make them too, they can tip in the ingredients, sprinkle on the cheese and or spread on the vegemite. They will quickly become a family favourite.
Ingredients for cheese and vegemite scrolls
- 2 cups self-raising flour (try wholemeal)
- 30g butter, chopped
- 3/4 cup milk
- 1 tbsp vegemite
- 3/4 cup grated tasty cheese
- Extra milk, to glaze
Method
Step 1. Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2. Sift flour into a bowl. Using fingertips, rub the butter into flour until you have a fine breadcrumb consistency.
Step 3. Make a well in the centre. Add milk and mix until soft dough forms. Turn out onto a lightly floured surface. Knead gently until just smooth – don’t over knead.
Step 4. Roll out to a 30ish x 20ishcm rectangle. Spread Vegemite over the dough and then sprinkle the cheese. Roll up firmly and place onto tray seam side down.
Step 5. Using clean scissors, cut into top of dough at 3cm intervals (don’t cut all the way through). Brush with milk. Bake for 20 to 25 minutes or until golden.
Tip: don’t stop at vegemite, these scrolls are very flexible for you to fill them with whatever flavours you like.
