Gingerbread men are quick and simple to make and can be decorated as little or as much as you like. A great activity is to make the biscuits and give each child a small bowl of icing (with a spoon) and decorations and they can decorate their own. This makes quite a big batch so I wrap half up in glad wrap and keep in the freezer, fresh biscuits in a few minutes.
Ingredients:
125g butter
2 Tablespoons golden syrup
1 Cup of sugar
1 egg, lightly beaten
2 1/2 Cups Self Raising Flour
2 Teaspoons of ground ginger (optional)
Method:
Melt butter and golden syrup (I do this in the microwave in a noodle bowl – big enough to hold all the ingredients and minimises washing up).
Allow to cool a little then stir in sugar and egg. Add flour and ginger (optional). Mix well.
Line a tray with baking paper and cut shapes. Bake at 160 oC for 8-10min.
Decorate.
