With allergies becoming more common it’s sometimes difficult to come up with things for lunchboxes, or you could just simply make this because you have no eggs either way these are yummy. I love this eggless chocolate cherry muffins recipe because it is quick and easily done in 5 mins, all you have to do is wait for them to cook.
I love one bowl wonders
Ingredients for eggless chocolate cherry muffins

- 1/3 rice bran oil
- 400g tinned cherries (drained)
- 1 cup brown sugar
- 1 cup of warm water
- 3 tablespoons of plain yoghurt (or whatever you have)
- 3 tablespoons of cocoa
Method
Pre-heat your oven to 150 degrees

About Kate: I try to do new and interesting things for the kid’s school lunches as I was sick of them coming home with their lunch boxes untouched. I know by talking to other parents I am not alone, which is why I started Little People, Big Tummies . My girls and I often cook together as I think it’s a great way to get them interested in healthy eating and trying new things. Not to mention teaching them how to cook which is a great skill to have.
