{RECIPE} Zucchini, Pea, Cheese and Ham Muffins

As with many of my recipes, I had an assortment of various items left in the fridge that I wanted to use, and thought that a nice ham and vegie muffin would be something my son would enjoy (which he did!).

Ingredients

Zucchini, peeled and grated.
Half a cup of frozen peas
30-50g of grated cheese
1.25 cups of self-raising flour
1 egg
50g of butter
300g plain yoghurt
25g of shaved ham, cut into small pieces

Method

1      Set oven to 180C

2      Mix zucchini, peas and cheese in a bowl.

3      Lightly beat egg and then add yogurt and melted butter to another bowl.

4      Sift flour and then add egg mixture to a bowl. Mix lightly then add in zucchini bowl.

5      Pour into prepared 12 muffin dish.

6      Cook for around 20-25 minutes, checking that skewer comes out clean at the end.
