This recipe came to mind for no greater reason that I had some very ripe pears that I wanted to use. At the same time, my little boy was a little ‘blocked up’ and I wanted to make something with prunes. Pear and prune – sounded like a good idea to me! I have used a recipe for savoury slices and modified it to work for a sweet slice. My little boy loved the pear and prune slices and I will be making some more.
Ingredients
1 cup self-raising flour
2 teaspoons brown sugar
1 teaspoon vanilla essence
6 eggs
3 pears, peeled and finely grated
12 prunes
Process
Pre-heat oven to 180 degrees celcius.
Grease and line a square (slice) pan with baking paper.
Stew prunes in boiling hot water for 15-30 minutes. Cut into small pieces.
Mix grated pear and prune in a bowl until well mixed.
Mix eggs in a bowl and then add flour and vanilla essence.
Pour fruit mixture into eggs and flour mixture. Add sugar and mix.
Cook for 30-35 minutes. Test with skewer – slice is cooked when skewer comes out clean.
Cool for 10 minutes then remove and slice.
