When my bananas become inedible (happens pretty quickly in Perth after a hot day) I pop them in the freezer. They are perfect for banana muffins and cakes and make them yummy and moist. I whipped these up in the thermomix. They took 10 seconds and they are deliciously light and fluffy. Perfect for an after school snack. I generally encourage the children to eat them outside as they are pretty crumbly.
1½ cups Self Raising Flour (use wholemeal self raising flour for a healthier twist)
½ cup Vegetable Oil
½ cup Milk
1 cup Caster Sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 large ripe banana mashed
1. Preheat oven to 180C
2. Mix all ingredients until combined. Mix by hand or in thermomix/food processor.
3. Fill muffin pans 2/3 full.
4. Bake for 20 min or until golden.
Enjoy these yummy banana muffins warm or freeze for a handy snack
