Banana Muffins

When my bananas become inedible (happens pretty quickly in Perth after a hot day) I pop them in the freezer. They are perfect for banana muffins and cakes and make them yummy and moist. I whipped these simple banana muffins up in the Thermomix. They took 10 seconds and they are deliciously light and fluffy. Perfect for an after school snack. I generally encourage the children to eat them outside as they are pretty crumbly.

To make the recipe healthier you can use wholemeal self raising flour and could halve the amount of sugar used.  Ripe bananas are naturally very sweet, reducing the need for added sugar.

Banana Muffins Ingredients

  • 1½ cups Self Raising Flour (use wholemeal self raising flour for a healthier twist)
  • ½ cup Vegetable Oil
  • ½ cup Milk
  • 1 cup Caster Sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extra
  • 1 large ripe banana mashed

Method:

Step 1. Preheat oven to 180C

Step 2. Mix all ingredients until combined. Mix by hand or in Thermomix/food processor.

Step 3. Fill muffin pans 2/3 full.

Step 4. Bake for 20 min or until golden.

Enjoy these yummy banana muffins warm or freeze for a handy snack
