Today my 4 year old and I cooked using this simple cupcake recipe. I love this recipe, they turn out perfect every time. We mixed these by hand, her preferred method to bake and they were all done in about 5 minutes.
Cooking together is such a special time where we give each other our full attention. My precious girl was having a taste test afterwards and said to me “mum I love you more than cupcakes’. I think that is about the highest compliment a 4 year old can give. Have a go of this simple cupcake recipe a go when you are baking with your kids.
Simple cupcake recipe
Ingredients for simple cupcakes:
- 2 Cups Self Raising Flour
- 3/4 Cup Caster Sugar
- 3/4 Cup Milk
- 2 Eggs – quickly beat with a fork
- 125 Grams melted butter
- 1 Teaspoon of vanilla
Method:
Step 1. Preheat oven to 180oC.
Step 2. Add dry ingredients to your bowl and mix. Stir in wet ingredients and mix until combined.
Step 3. Scoop mixture into patty pans (fill no more than half full).
Step 4. Bake for 15-20 minutes until golden. Note I make small cupcakes and so 15 minutes is plenty, for larger cupcakes they will need 20 minutes.
Step 5. Once cool, put on your favourite icing (or they are delicious without icing) and enjoy.
Simple Chocolate Icing Recipe
- 1cup icing sugar
- 1 tablespoon cocoa
- 30 grams softened butter
- Milk until right consistency
Method for simple icing
Mix all icing ingredients, adding milk until it is thick and spreadable
