Today my 4 year old and I cooked using this simple cupcake recipe. I love this recipe, they turn out perfect every time. We mixed these by hand, her preferred method to bake and they were all done in about 5 minutes.
Cooking together is such a special time where we give each other our full attention. My precious girl was having a taste test afterwards and said to me “mum I love you more than cupcakes’. I think that is about the highest compliment a 4 year old can give.
Simple cupcake recipe
Ingredients:
2 Cups Self Raising Flour
3/4 Cup Caster Sugar
3/4 Cup Milk
2 Eggs – quickly beat with a fork
125 Grams melted butter
1 Teaspoon of vanilla
Method:
Preheat oven to 180oC.
Add dry ingredients to your bowl and mix. Stir in wet ingredients and mix until combined.
Scoop mixture into patty pans (fill no more than half full).
Bake for 15-20 minutes until golden. Note I make small cupcakes and so 15 minutes is plenty, for larger cupcakes they will need 20 minutes.
Once cool, put on your favourite icing and enjoy.
Chocolate Icing suggestion
1cup icing sugar
1 tablespoon cocoa
30 grams softened butter
Milk until right consistency
Mix all icing ingredients, adding milk until it is thick and spreadable
