Yummy rainbow biscuits recipe

These rainbow biscuits are simple and delicious, my kids like to call them unicorn poo.

I made theses rainbow biscuits for my daughter’s after school play date and they only took 20 minutes to make and were cooked in 10 minutes. Quick and easy, perfect for a busy mum.

They do use a bit of food dye, or you could use natural colouring (blueberries for pink, carrot for orange, spinach for green, purple cabbage for blue – add a little of the fruit/veggie to a small amount of water and boil it – the colour comes out and you can remove the fruit/vegetable).

  • 1/2 Cup Caster Sugar
  • 125 g Butter, softened
  • 1 Egg
  • 2 Cups Plain Flour
  • 1 teaspoon Baking Powder
  • Food Colour

Method:

Step 1. Cream butter and sugar together in a mixer. Beat in egg until will mixed. Gently stir in sieved flour. Divide into 4-5 bowls depending on how many colous you use. I used 4. Mix through 1 colour in each bowl.

Step 2. Roll balls of each colour dough, using half a teaspoonful of dough. Place 1 ball of each colour together to form a small ball.

Step 3. Roll the dough out in to a sausage shape.

Step 4. Wind the dough up into a snail, yes its lucky we practice with playdough.

Rainbow biscuits rolled into a snailStep 5.  Voila, Bake at 180 oC for 8-10 min on greaseproof paper, allow to cool on a rack and then share.
