Gingerbread always makes me think of Christmas. The sweet aroma, crunchy texture and gentle warmth when eaten cannot easily be replaced by any other food. The flavours meld so well with cream cheese; it makes this modern take on cheesecake work so beautifully. These Gingerbread Cheesecake Shots are very Festive!
Makes 6
YOU’LL NEED
250g Cream Cheese (room temp)
1 x large tablespoon Glucose Syrup (or 1/3 cup caster sugar)
1 x teaspoon ground Cinnamon
1 x tablespoon Brown Sugar
Pinch of Salt
A few drops of Vanilla Extract
Milk (approx ½ cup)
50g mini Gingerbread Men (6 saved for garnish, the rest crushed)
THE HOW TO
Place your cream cheese, glucose, cinnamon, salt, vanilla and brown sugar into a mixer and whip for about 3 minutes until well combined;
Slowly add your milk until the mixture gets to a nice poring consistency;
Decant mixture into a pouring jug;
Take your shot glasses and dip each carefully into the mixture so the rim is coated evenly. Now dip into your gingerbread crumbs to “rim” your glass;
Pour your cheesecake mixture into your glasses and dunk in a Gingerbread Man……Bottoms Up!
TOP TIPS!
If you ensure your cream cheese is a room temperature before you start, it means you won’t have a lumpy mixture!
