Superfood brownie = super healthy snackBusy Mums need superfood snacks to get them through the day. Nutritionist, Simone Nicholls explains the importance of healthy snacking and gives busy Mums a handy go-to recipe.  

We all love to snack right? So it’s important we make the right choices, not only for nourishing the mind and body but also setting a healthy foundation within the family home. A good place to start is by reducing refined bleached flour products including white breads and bakery goods loaded with unhealthy fats, sugars and additives. Fueling the body with nutrient dense ‘back to basic’ wholefoods is what will provide an abundance of energy and positive mental wellbeing you need day to day. You don’t ever want to restrict yourself of the finer things in life by countless fad diets or quick convenient packet foods that claim to be diet/fat free because this is not a solid healthy lifestyle.

Thankfully I have taken the hard work out for you and provided one VERY healthy superfood slice so you can see just how easy it is to enjoy delicious treats while also providing the body with plenty of nutritive ingredients to thrive.

As a Nutritionist, I want to break it all down for you…

Lupin flakes are my latest foodie love with a profile rich in protein and dietary fiber (both excellent for weight-loss goals) and also a gluten free alternative in cooking. Did you know it is a legume! We all need more legumes in our diet and you can use the lupin for crumbing meat, lasagna toppings or as a replacement to flour for sweet and savory recipes.

Bananas make an all natural and nutritious wet ingredient in desserts adding plenty of moist sweet flavour as well as potassium, vitamin C and B6 (one of your happy vitamins). Feeling the Monday blues? Eat a banana.

Nuts & seeds provide an abundance of beneficial nutrients – I could talk about them all day. Protein, Fiber, B’s, iron, calcium, antioxidants, healthy fats and the list goes on. You are advised to consume 30 grams a day to reduce your risk of non-communicable diseases such as heart disease and diabetes type 2.

Honey is an all-natural sweetener option and lower GI (score of 55) to some alternatives like refined white and brown sugars and rice malt syrup. It gives a lovely flavour and is great for desserts, marinades and smoothies. From bee to bowl sounds like a much healthier option doesn’t it?

Instructions

Preheat oven to 160 degrees fan-forced and line a brownie tray with baking paper.

In a medium bowl, mash banana and water together then add in all remaining ingredients and combine using a fork.

Evenly smooth out the mix into your brownie tray and top with your favourite nuts, seeds or coconut.

Bake for 20 minutes and allow cooling before slicing into even squares to then enjoy with your desired herbal tea.
